Kale fry

 Kale fry. Easy and healthy recipe

Ingredients

Kale Florets                                  3 cups

Garlic pearls chopped              6

Salt to taste

Oil

Method

Heat a pan with oil.

Add garlic and saute it.

After 1 minute add the kale, salt and mix well.

When the kale became tender remove, and serve. 

Very tasty.

Bajra Dosa

In Tamil, we call Bajra - Kambu. In Tamil Nadu, farmers drink this porridge made of kambu early in the morning and go to work in the farm. It is full of nutrients like fiber, protein etc.
Ingredients
Bajra                               1 cup
Split Moong dhal             1 cup
Urad dhal                        1/2 cup
Salt to taste

Bajra Dosa

Method

Wash well and soak bajra for 6 hours and dhal for 2 hours
Grind all into a smooth paste and add salt
Make dosas and serve with coconut chutney

Dhal Dhokli (recipe got from my daughter-in-law )

Dhal Dhokli is made with leftover chapatis or freshly made ones
Ingredients
Cooked Tur dhal                  1 cup
Chapatis                             4
Sambar powder                   3 tsp
Tamarind paste                    tsp
Mustard seeds                     1 tsp
Red Chilies                          2-3
Jaggery(gud)                       3 tbsp.
Hing                                    a pinch
Peanuts(optional)                3 tbsp.


Method

Cut the chapattis one inch long
Boil the tamarind with turmeric, sambar powder (or red chili powder + coriander powder).
Add cooked dhal, hing, salt, gud,  peanuts and chapati pieces
Let it boil, add water according to consistency
Boil and stir  nicely
Heat a tawa, add mustard seeds and red chilies
When it splutters, add to the dhal.
If desired, add vegetables to the dhal e.g. onion, tomato, beans
Eat with raita or pappadams

Red Swiss Chard Molakuttal

Swiss chard (Beet greens) is full of vitamin A,K, Potassium, Calcium etc. I tried this Swiss chard molakuuttal  with ground coconuts. It is so  tasty and easy to prepare
Ingredients
Red Swiss Chard                       one bunch
Grated Coconut                          one cup
Red chili                                      2 
Turmeric powder                        1/4 Tsp
Urad Dhal                                   2 Tsp
Salt to taste





Method

Wash the red swiss chard thoroughly and cut into pieces with the stem,
Boil it with water and turmeric powder, till it is cooked.
When it becomes cold, grind and keep.
Grind coconut, chili and jeera into a smooth paste.
Mix both paste together with salt.
Heat a pan with little oil add mustard, and urad dhal. When it splutters add to the swiss chard/mix.
You can add cooked moong dhal or tur dhal too

Red Peppar Chutney

Red pepper Chutney

Ingredients

Red Pepper.                               2
Urad Dhal                                   2tbsp
Red chili.                                    5
Tamarind pas                            1/2tsp
Mustard seeds                           1tsp
Salt to taste

Method

Heat a pan with. Oil add  urad dhal and red chili.
When the urad dhal becomes red add the chopped red pepper and roast it till it becomes tender.
Grind all together into a paste.
Heat a pan with little oil add mustard seeds. When it splutters add to the chutney.

Red Swiss chard bhaji

 This bhaji is a side dish for chapathi .Easy to prepare.



Ingredients 

Red Swiss chard                   one bunch

Chick peas                       1/4 cup

Onion                                  1

Tomato                                  1

Garlic                             2

Green chili                            2

Chili. Powder                       1tsp

Dhania powder                      1tsp

Mustard seeds                        1tsp

Cumin seeds                            1tsp

Salt to taste

Method

Wash well and chop the swiss chard into small pieces.

Cut the onion and tomato into small pieces.

Heat a pan with oil, add mustard and jeera.(cumin seeds)

When mustard seeds splutters add onion, tomato slit greesn chili and salt.

Sauté them and add cooked chick peas and chili ,dhania powder,.

Let all the water dry

Red Swiss Chard (Beets. leaves Bhaji)

 Red swiss chard or beets leaves have high iron content , good source of fiber and vitamin k. So good for health.

Ingredients

Swiss Chard                              one bundle

Moong Dhal                             1/2 cup

Mustard seeds                         1 tsp

Urad Dhal                                1 tsp

Chili                                   1

Turmeric powder               1/2 tsp

Grated Coconut                1/4 cu

Salt to taste


Method

Wash the swiss chard and chop into small pieces

Heat a an with little oil.

Add mustard., urad dhal and chili.

When the mustard splutters add the chopped beets leaves, turmeric, moong dhal and salt. 

Cover to cook.

After 10 minutes mix  the bhaji and add grated coconut.

This is side dish for rasam, sambar and chapathi.

Karpooravalli Rasam(Ajwain leaves rasam)

 Karpooravalli is a medicinal plant. I made rasam with this leaves.Good for cold and cough. This rasam is very good in winter time.

Ingredients

Karpooravalli Leaves               8 to 10

Tomatoes                                 5/6

Green Chili                               2(optional)

Garlic pearls                             6

Pepper/Cumin Seeds"             1tsp each

Cooked Tur dhal                        1cup

Sambar Powder                          1tsp

Hing                                           1 small piece                      

Tamarind paste                          1/2tsp

Sugar or jaggery                       1tsp

Coriander/ curry leaves            few














Mustard Leaves and Cumin Seeds 1&tsp each

Salt to taste

Method

First grind  tomatoes, garlic, ginger, pepper, cumin seeds and 4 karpooravalli leaves into a paste

Boil one cup of water, add the paste, tamarind, Hing, sambar powder, sugar and salt.

After boiling for 3 minutes add the cooked dhal water, curry leaves remaing karpooravalli leaves ( chopped into small pieces )and coriander leaves.

Heat a tawa add 1tsp oil or ghee ,add mustard and cumin seeds. When it splutters add to the rasam.Drink or eat with rice

Home Made Butter (Butter from heavy cream)

From heavy cream  cream ( organic)  you can make butter.  Anju our neighbor  gave this information .Thank you Anju.

Yesterday, I bought organic heavy  cream 
small packet. Boil it  at night and add  good culture dahi and keep in a-warm place. Next day put it in vita-mix.. The butter separates from cream. You get buttermilk too. Melt the butter into ghee. Home made ghee is ready.
